I love to use pure unsweetened cacao powder in desserts!
I suggest always buying 100% cacao, since anything less than that has some kind of sugar added.  I prefer to buy the pure 100% unsweetened cacao so that I can choose to add my own healthy sweetener.

Pure cacao powder comes from cacao beans that are defatted, dried, and ground.
Surprisingly, the industry does not differentiate between the pure cacao and pure cocoa. So either label is fine. I try to buy raw cacao powder, and you can choose either raw of not.

Baking chocolate is different from cacao powder.
Baking chocolate comes in a bar after being cooked and melted, and it does contain the fat. If you’re buying baking chocolate, look for unsweetened 100% cacao. You can convert any recipe that calls for 100% baking chocolate or bar into cacao powder: For every 1 ounce of unsweetened baking chocolate, use 3 tablespoons of pure cacao powder plus 1 tablespoon of coconut oil.

Paleo chocolate is 100% cacao.
This is the only chocolate that qualifies as Paleo, since it is 100% cacao with no other ingredients, and no refined sugar. When you buy any type of chocolate, check the label to make sure it contains 100% cacao and no added ingredients.
