Liver is more than a seasonal delicacy. It is one of Nature’s most potent superfoods! This pate tastes rich and creamy, much like traditional pâté de foi gras. The main difference is you can make it in 15 minutes or less. I wanted a way to prepare liver with minimal cooking for a soft texture, and to preserve essential nutrients. This came out velvety smooth and luscious. Use any type of pasture-fed liver such as chicken, beef, duck, etc. Refrigerate up to 3 days. Or you can freeze in ice cube trays overnight; then transfer cubes to a zip-lock freezer
Delicata squash is a satisfying, nourishing meal, and the hollow center is perfect for stuffing. Even better, you can eat the skin! Here’s an easy breakfast, lunch or dinner that’s perfect for the fall season. Add herbs and spices to vary it as you like. Serves 2. Print Baked Egg in Squash with Bacon Rating: 51 Ingredients 1 medium delicata squash 1 green onion, diced 2 tablespoons Vegan Cream Cheese, or goat cheese 1 tablespoon teaspoons cooked bacon 2 large eggs Instructions Preheat oven to 350 degrees. Line a small baking tray or dish with parchment paper. Slice the squash
I am eating soufflé and re-living my childhood as I write this post. I’m 7 years old at the dinner table. My father has just carried in a cheese soufflé with wild mushrooms that he collected in the woods of Silver Bay, Minnesota. We’re all waiting with baited breath while he serves it. As we take the first bite, he quietly pulls a dusty book off the shelf and begins to read: “There are strange things done in the midnight sun, by the men who moil for gold. The Arctic trails have their secret tales that would make your blood
What could be more wonderful than fresh Blueberry Jam on your Paleo Toast? Here’s a recipe for Blueberry Jam that’s so pure it will refresh you body and soul. Make it in 15 minutes with a blender
Yum! Here’s the easiest high-nutrient breakfast in town. Make it in 5 minutes! Eggs Florentine sounds fancy, but it’s just eggs over wilted spinach. In Florence they poach their eggs, however you can prepare them any way you like. I love scrambled eggs because they’re quicker, and it’s easy to blend Paleo “Cream Cheese” into them. This is made with coconut butter and lemon, which tastes like cream cheese and sends the flavor right to the moon. It’s fabulous! This is a super-quick breakfast. Try using 2 medium skillets, preferably non-stick. One pan is to scramble the eggs and the
I’m so excited about this new discovery! Easy Vegan Mayonnaise that’s smooth, delicious, and healthy too! Slather it on sandwiches or wraps. Use it a dip, a salad dressing, or a sauce for veggies. I wanted a creamy homemade mayo that’s ready in minutes, with no risk of curdling in the blender, no worries about eggs spoiling, and no sugary store-bought mayo with gmo oils. Just pure and healthy with a smooth, spreadable texture. This mayo doesn’t taste exactly like Hellman’s. It has that rich and subtle flavor of – well, hemp. I discovered the recipe by accident when making
Everybody loves tacos! But where do you find a Paleo taco without GMO corn, cheese, beans, or sour cream? That’s why these Paleo Breakfast Tacos are truly a miracle. I promise you they taste fabulicious, and anyone can make them. Start with my easy Paleo Tortillas recipe. Then fill them with scrambled pasture eggs, fresh greens, grated carrot, chopped cilantro, Tomato Salsa, and – my amazing new creation: Spicy Cheese Sauce that’s Paleo, Vegan, and 100% dairy free! See the recipe below. Whew! What a meal! This is a basic vegetarian taco. Sausage is optional, for folks that eat meat.
Savory wraps are a perfect accompaniment to any meal! Like a thin pancake or crepe, they’re great for dipping, wrapping, & sopping up juices on your plate – instead of bread. Gluten, grain & GMO-free. Add your favorite filling and wrap it, or just fold and dip. They’re inspired by Indian flatbread and Mexican corn tortillas, so you can eat with your hands! These are easy to make in minutes – just blend the batter and cook in an 8-inch non-stick pan. I used them for Paleo Huevos Rancheros instead of corn tortillas, and they were truly yummy! With this
I can’t remember what happened. I spun the blender, and somehow poured this sauce on the Chocolate Brownie Waffles. I’ve no memory after that. Just pure berries. Perhaps I just blacked out or drifted into a parallel dimension, transported further away with each bite. This is the easiest sauce I’ve ever prepared. And it tastes sensuously wonderful on everything. Maybe it was the deep fuchsia color. I have no words – and can’t even write this post. When I come back, I’ll try to describe my experience. Makes 1 1/4 cups sauce. Print Easy Blackberry Sauce Rating: 51 Ingredients 12
I love authentic “carbonara”, but it’s loaded with carbs, which cause me to gain weight. THIS delicious Paleo version is super-low-carb! Zucchini noodles are the key to an easy meal. I left the table feeling satisfied, not stuffed. Traditional Italian “carbonara” is made with raw eggs cooked on contact by boiling hot spaghetti. I didn’t want to boil delicate zucchini noodles, as they’d fall apart. I could steam them, but wasn’t sure they’d be hot enough to cook the eggs on contact, and some people worry about eating raw eggs (However, I enjoy raw organic pasture-raised eggs all the time!).
I’m not Irish, but I love Ireland and I especially love GREEN. Here’s an absolutely delicious, INSTANT and refreshing mint mousse that will make your taste buds AND your blood cells tingle. It’s so easy, just blend and enjoy in 5 minutes. I would NEVER use food coloring, so I had to come up with a HEALTHY way to create the prefect color of green. Well, why not chlorophyll, the original phyto-chemical that makes plants green? Cholophyll controls photosynthesis, AND it is a powerful body de-toxifier. You should probably be taking this anyway, because it increases the oxygen available to the
Smooth and flavorful ketchup means the best tomatoes, and a perfect balance of tart, sweet, and a bit spicy. This easy homemade ketchup tastes so delicious you’ll want to use it on everything! It’s quick to make in the blender, then simmer and it’s ready to enjoy. I used Eden’s Organic Roma crushed tomatoes, which are packed in an amber glass jar to protect the nutrients from being destroyed by light. It’s important to buy tomatoes either raw or in a glass jar, never canned. Tomatoes are high in acidity, which dissolves the toxic BPA plastic lining in cans, so
I love traditional saffron risotto, made with arborio rice and lots of Parmesan cheese! Just so you’re not deprived, here’s a cauliflower rice recipe that tastes almost the same. Paleo cauliflower rice is a quick and easy low-carb side dish, and I find it lighter on the digestion than rice. The “cheese” sauce is deliciously rich, and comes very close to that Italian “Milanese” flavor. Saffron is one of my favorite spices. Although I’ve cooked with it for years, I recently learned it comes from the pistils of a crocus, and has to be delicately plucked from the flower. No
Heinz is yummy – however THIS ketchup is tastier! Tart, sweet, and rich all at the same time. If tomatoes are off your list, this is for you. It’s made of carrot, sweet potato, and beet, but you’d never guess. Commercial ketchup is loaded with high-fructose corn syrup or sugar, so why buy it when you can have more flavor, lower carbs, and higher nutrition for less money? The recipe uses natural chicory root Just Like Sugar Table Top sweetener, which has zero sugars and zero calories, to spare you the glycemic rush. Or use your favorite sweetener. Just blend
Unbelievably easy and decadently wonderful, this chocolate pudding is instant! It’s made with blended sweet potato and cacao. Children and adults love the rich flavor, reminiscent of a Southern chocolate sweet potato pie. Mmmmmm! A quick and healthy snack or dessert, no one would guess they’re eating vegetables! Sweet potatoes are an excellent source of beta-carotene and Vitamin A, an important antioxidant. They’re high in Vitamin B6, which is critical in preventing hardening of the arteries. Sweet potatoes also contain healthy fiber, which gives them a “slow burning” quality. The suggested sweetener is Just Like Sugar Table Top natural chicory
This is an authentic Italian risotto, re-invented Paleo style. Which means it has a wonderful broth, and rich, deep flavor of Parmesan cheese. I was planning a cauliflower risotto for you today. But someone in the family made quinoa that had to be used. Wow! It was incredibly delicious and so easy! You can make this recipe with EITHER quinoa or riced cauliflower. The Paleo Police are on the fence about quinoa. Technically, quinoa is neither a grain or a grass – it is rather a seed related to Swiss chard, spinach and beets, so many people define it as
Make this yummy, rich, satisfying treat in just a few minutes. Smooth, creamy sweet potato with coconut butter tastes just like butterscotch pudding. AND it’s a healthy vegetable! Sweet potatoes are high in beta-carotene and Vitamin A, a powerful antioxidant. They’re loaded with Vitamin B6, which is crucial in preventing hardening of the arteries. Sweet potatoes are also high in fiber, which gives them a “slow burning” quality. Just blend the ingredients slightly warm, and they’ll soften into a lovely pudding quality. It tastes wonderful eaten right away warm, or you can chill it to thicken even more. This is
I just invented this quick and delicious pick-me-up or dessert. Everybody goes crazy for the creamy texture. It’s so simple and elegant made with pure strawberries and coconut. Just blend, chill and serve. Only 5 ingredients plus love. It’s low-carb and luscious. Find lots more luscious treats in my new book Paleo Desserts! Serves 2. Print Easy Strawberry Mousse Rating: 51 Ingredients 1 lb fresh strawberries, or 1 package frozen and very well drained (I suggest organic strawberries, as they’re one of the “dirty dozen” foods that absorb a lot of pesticides.) 2 tablespoons lemon juice 1/3 cup sweetener. Chocolate Raspberry Cheesecake Bars – You might just swoon at the sweet flavors in these romantic love bars! You’ll taste 4 creamy layers in each bite – crunchy nuts, chocolate fondant, smooth cheesecake, and tart raspberry glaze. This is not a bar, it’s a candy! A love bite! And a perfect healthy treat for someone special. It’s Paleo, gluten-free, dairy-free, vegan, and raw. Just a tiny piece puts me in a good mood. Makes one 9 x 9-inch pan of pure bliss. I cut them in tiny 1-inch squares, or you can cut them any size you like… Find more
That’s right, it’s blue! Once in a blue mousse, you discover something so fabulous that it jump-starts your day in 2 minutes! This creamy blueberry mousse gives you everything you need – smooth texture and great flavor for vital health. It’s instant – just blend and enjoy immediately! Use it as an afternoon pick-me-up or easy dessert. The thick texture comes from natural pectin in blueberries; and the rich creaminess comes from blended avocado. Blueberries are loaded with healthy polyphenols known as anthocyanins, powerful antioxidants that neutralize free radicals in the body. Anthocyanins are what makes blueberries blue in color.
I just discovered a super-easy way to make delicious vegan cheese sauce for broccoli. It’s so tasty and quick, I ate the whole batch myself! Broccoli is an important source of calcium for folks that don’t consume dairy, like Paleo and vegans. Instead of cheese, the recipe uses coconut milk, lemon juice, and nutritional yeast. This is yummy for lunch or as a side dish. You can choose to eat the broccoli stems or not. I love broccoli stems, and they’re chock full of healthy nutrients like Vitamin-C, Vitamin-A, beta-carotene, folic acid, and fiber. Broccoli is best steamed to retain
I love sharp cheddar cheese! This Paleo-Vegan cheese tastes almost exactly like Wisconsin cheddar, except it’s dairy-free. It is a firm, rich, creamy cheese, with a slightly tangy flavor. Delicious on crackers, slice it for sandwiches, grate it into salads and soups, or use it to make vegan cheese sauce for veggies. It is made with coconut butter, lemon and a few other secret ingredients you can find in any healthy grocery. It’s easy to make – just blend, chill, slice, and eat! It keeps well in the freezer, so you can use it whenever you want. Allow it to
I created this recipe by accident, and it has become my absolute favorite “cheese” for Vegan Pizza and Paleo Pizza. We DO want cheese on our pizza! It slices beautifully, and uses pure coconut instead of dairy. While it’s not an exact duplicate of the taste, it’s so close that when you serve it, the enthusiasm takes center stage and no one notices it’s not cheese. This recipe is also free of soy, gmo, and stabilizers or thickeners like so many “Vegan” cheeses. You’ll need a good blender and a bit of patience, but the reward is definitely worth it!.
If you go into a restaurant in Paris and ask for chocolate crepes, they’ll give you “Crêpes Sucrées avec Crème Pâtissière and Sauce au Chocolat”, or “Sweet Crepes with Pastry Cream and Chocolate Sauce”. Just so you guys aren’t deprived or anything, here’s the same recipe Paleo-style! That means it’s free of gluten, grains, dairy, sugar, refined foods and ridiculously low in carbs. Why not! We get to enjoy real food that APPEARS to be a French delicacy. And they taste truly luscious, every bite. Once you have the ingredients assembled, there are a hundred ways to design them. You
I used to love my Mom’s baked chicken parmesan because it was crispy, flavorful, and the whole house filled with delicious aromas. This easy recipe is Paleo-adapted, free of gluten, grains, dairy, and I promise you’ll love every bite. Instead of cheese, it uses lemon, coconut butter, nutritional yeast and Vitamin-C crystals. Try it – you’ll be amazed! I buy organic pasture-raised chicken because I like to make sure my chickens are healthy, getting quality non-gmo feed, and have room to walk around and eat bugs! I prefer to bake chicken parmesan in the oven so it is crispy, and
Here’s one of the best Paleo lunch ideas: Wraps! I love them because I can eat them with my hands like a sandwich. Just blend and cook in 5 minutes, or make ahead and freeze. Fill them with egg salad, chicken salad, salmon, leftovers, raw or cooked veggies, whatever you have on hand. I filled it with a spinach-fennel salad with sprouts and it was yummy! These veggie wraps are green with blended vegetables. Makes 6 wraps. Print Paleo Lunch Wrap Rating: 51 Ingredients 3 large eggs (See The Best Eggs are Pasture-raised Organic) 2 tablespoons arrowroot powder 2 pinches
I was amazed these Paleo Crepes are so quick and easy. Just blend 4 ingredients and presto! – perfect crepes like Julia Child’s! These are Paleo, gluten-free, grain-free, sugar-free, tree-nut-free, soy-free and nightshade-free. Hooray! You can fill them, roll them or fold them. You can make delicious Paleo Crepes with Wild Berries, or Paleo Crepes with Chocolate Sauce, Wild Salmon Paleo Crepes, or Paleo Mushroom Crepe with Tarragon Cheese Sauce. The possibilities are endless. Just for fun, I tested three different trial recipes: 1) Almond meal and arrowroot as the “grains”. 2) Arrowroot and no almond meal. 3) No almond
I love this lemon meringue pie! Here’s a dessert that tastes truly delicious and healthy all the way down to your toes. It is refreshing, tart, rich, and luscious, just like Grandma’s, except it is loaded with whole food nutrition. To preserve the authentic flavor, anti-oxidants Vitamin C and bioflavonoids, the filling uses zest and blended pulp of fresh, uncooked lemons. This peel-and-blend method uses the entire fruit. Plus it’s quicker and healthier than squeezing lemon juice. Every part of this pie excites the senses and is highly nourishing. Let’s forget about empty-calorie, tasteless gluten-free flours, and gmo cornstarch for
Here’s an easy chocolate treat that will knock their socks off! Lusciously moist and easy to prepare, this cake makes a beautiful presentation for any special occasion. It is gluten-free, low-carb, Paleo, diabetic-friendly, and easy on blood sugar, made with coconut and sweetened with Just Like Sugar Table top natural chicory root sweetener. Or use your favorite sweetener. I love it with Paleo Chocolate Sauce drizzled on top. Try the optional Raspberry Marble filling! You’ll need a food processor, a blender, and a 10 or 12 cup Bundt pan. This is my favorite turkey recipe in the world! BTW, Turkey Tetrazzini is NOT Italian. It was invented by the famous soprano Luisa Tetrazzini. She asked for creamed turkey over spaghetti with Parmeggiano Reggiano, and she got it! She lived at the Palace Hotel in San Francisco, where the chef prepared it for her. Madame Tetrazzini was 100% Italian, and a feisty lady too! Read a bit of her story below. This holiday, I decided I NEED Turkey Tetrazzini, and I wanted to make it Paleo, meaning no pasta, no dairy, and wild! The farmer’s market had an organic pasture-raised turkey.
