1. Real Food. It’s essential to use natural ingredients like low-sugar fruits, vegetables and nuts. Forget refined and prepared foods like flour, sugar and even so-called “natural” sweeteners. Forget wheat and gluten-free flours. Don’t even think about using common allergens like dairy, corn, soy or peanuts. You’ll be amazed at the delicious flavors of authentic, unrefined food.
2. The REAL key is the LOWEST carb flour and the LOWEST carb natural sweetener.
The first essential is flour. I use pure shredded unsweetened coconut flakes, ground in any home food processor. It’s a delicious, nutritious whole food with only 27% carbs.
The second essential is a sweetener. I use a natural sweetener made from chicory root fiber called Just Like Sugar Table Top. It tastes wonderful, and is easy to use cup for cup like sugar. You can buy Just Like Sugar Table Top in some whole food stores, online, or by clicking the link right here. Chicory root is high in FOS inulin, a sweet fiber that is not digested as a carbohydrate. It is a natural, zero carb, zero sugar, and non-caloric sweetener that causes no rise in blood sugar or insulin response. I don’t sell it, I just like it and I use it. Make sure you ask for the Table Top, not Baking, which is measured differently. You’re free to experiment with your favorite sweetener, however you may miss out on the benefits of low-carb desserts.

(Note that most gluten-free flours are very high in carbs. And coconut flour is high in carbs, since it is refined, defatted and processed into powder including the hull and husk.)
