Nori Wrap, a Meal in Minutes

When I want a healthy meal in a minute, I grab a seaweed wrap. Seaweed is a superfood loaded with healthy Vitamins B12, C, D, E and K. It is rich in minerals such as potassium, selenium, calcium, iodine, magnesium, and potassium. Oh, and even better, it boosts energy levels and libido in both men and women. Nori sheets can be expensive, so I look for those thick nori packs in some healthy grocery stores, or Japanese markets. One pack lasts me 8-12 months. You can put just about any filling you like in your nori wrap. Today I had wild sardines, avocado, greens, and cashew mayo. As you can see, it was truly yummy. Other filling possibilities are egg salad, wild salmon, chicken salad, sprouted quinoa, or leftovers. One nori wrap makes a light lunch. Two is quite filling. Here’s the recipe for my lunch today.

Ingredients

  • 1 nori sheet
  • 2 tablespoons Cashew Mayo
  • 1 can wild sardines in water or olive oil
  • Handful leftover salad
  • 1/2 avocado, in chunks

Instructions

  1. Lay out the sheet of nori on a cutting board.
  2. Slather it with mayo or sauce, or not.
  3. Arrange your fillings on one side of the sheet.
  4. Roll and eat.
