Paleo Grilled No-Cheese on Rosemary Bread

Dairy-free grilled cheese? YESSS! Grilled cheese used to be a comfort food for me. But sadly, I’ve been missing it for years… until now! Yep, today I finally figured it out. I’m thrilled! This grilled dairy-free cheese sandwich is high in protein, without any gluten, or grain – and it’s very low in carbs. Yay! When you use my Dairy-free Cheddar Cheese with any of my bread recipes, such as Rosemary Bread, this sandwich is a snap. Oh Yum!

Tip: Do not overmelt the cheese. Coconut melts at a lower temperature than dairy cheese, and may separate at high temperatures. Wow, was this delicious! It was so nutrient-dense I could eat only half the sandwich. Check it out. I really enjoyed my comfort food fix. Oh yes! I hope you do too!

Pour your liquid cheddar cheese into two containers so it freezes into a flat slab about 1/2 inch thick. To make the sandwich, cut a slab of frozen cheese to fit on your bread. Place it between 2 slices of bread. Toast the bread until it is golden brown on both sides, and the cheese is barely melting.

  1. In a large skillet over medium low heat, melt the coconut oil until it is hot.
  2. Place 2 slices of rosemary bread into the pan and toast them slightly.
  3. Cut cheddar cheese to fit the size of the bread, and place on one of the slices. Close the sandwich and continue to toast until both sides are golden brown.
