Jane’s Recipes

DSC_2602 - Version 2

My recipes are all original. Every one! Food should bring you energy, clarity and JOY! Perhaps my biggest discovery is how to make sweets that don’t elevate blood sugar or cause weight gain. We believe desserts are BAD for us (and most of them are)! However sweets can be HEALTHY! In an epidemic of sugar-related diseases like diabetes, heart disease and cancer, THIS is the solution: Use low-carb, original, unprocessed ingredients. There’s no need for deprivation. Here are some of my recipes. Try them and send me your comments!  Jane

Jane-Icon-2This amazingly rich and creamy frosting is a snap to make. It tastes just like my mom's, except it has no cream cheese! Instead, it uses coconut butter and lemon. Yes, those are my teeth marks! This deceptively easy frosting came about by accident. When I was blending my Vegan Cream Cheese, I suddenly thought - OMG what if I add

Jane-Icon-2I can't live without fluffy holiday potatoes! But now we have 4 big problems: 1) White potatoes are a high-carb, low-nutrient invitation to elevated blood sugar and weight gain. 2) Nightshade intolerance is more common. 3) GMO potatoes are here! 4) The Paleo diet excludes white potatoes. So I decided to test 6 different veggies to find a tastier, healthier alternative

Flourless Chocolate Pumpkin Cake

This fabulous one-step cake is an easy holiday dessert with a rich, old-fashioned flavor of chocolate spice cake. Just blend and bake! One of my new experiments in flourless sweets, this recipe uses rolled oats or any rolled whole grain. More than a yummy treat, it's a nutritious, high-fiber dessert or snack. A few months ago I would have used almond flour, but now it is very expensive, and like all flours it oxidizes quickly.
