Vegan Pumpkin Flan with Goji Berries

This easy flan is perfect for the holidays, just blend, pour into glasses, and allow a few minutes to thicken before serving. Goji berries are a high anti-oxidant superfood that lifts immunity, mood, skin health, and sexuality. Well, you can’t beat that! Gojis have a sweet flavor and make the flan a beautiful orange color. They’re rather expensive, however a one pound bag lasts me about 6 months. Goji are often said to be a member of the nightshade family, however I do not react to them like other nightshade foods. Orange zest and orange juice add zingy flavor and an extra shot of Vitamin-C. Pumpkins are rich in beta-carotene which converts to Vitamin A for healthy eyes. This flan – or call it a mousse – is dairy-free, made with coconut milk. It won’t destabilize your blood sugar or cause weight gain like conventional sweets, because it’s extremely low in carbohydrates, provided that you use one of the suggested non-glycemic sweeteners.

I used agar to thicken. It needs to be cooked briefly and mixed into the flan, then it takes 20-30 minutes to completely thicken. I buy agar powder in bulk online because it’s so convenient and works almost instantly. You can also use agar flakes, found in most grocery stores. (Unflavored gelatin will also work, however it is often derived from GMO-fed animal parts, and is not vegan.) Try serving this treat with Instant Coconut Whipped Cream! Store the flan up to 4 days in the refrigerator. It is not necessary to chill if you’re serving it today, as it contains no milk. In fact I prefer it at room temperature so the flavors come out more. Makes 4 servings of 8-ounces each.

Ingredients

  • 2 cups [Just Like Sugar Table Top natural chicory root sweetenerhttp://janeshealthykitchen.com/just-like-sugar-table-top-sweetener/]
  • 1/2 cup lukewarm water

Instructions

  1. In a mixing bowl, stir together the sweetener and water until it is smooth and the sweetener is completely dissolved. That's it! Use the white icing as-is.
  2. Choose the colors you wish to use. Get out white cups to hold them. Put 3-4 tablespoons of white Royal Icing in each cup. Stir in a few drops of the non-toxic color liquid in a cup, adding more bit at a time until it reaches your desired intensity of color.
  3. You can lighten the color by adding more sweetener. If any of the color cups become too runny, you can stir in a bit more chicory sweetener to thicken.
