Paleo Grilled Cheese on Rosemary Bread

Grilled cheese used to be a comfort food for me. But sadly, I’ve been missing it for years… until now! Yep, today I finally figured it out. I’m thrilled! This grilled cheese sandwich is high in protein, without any gluten, grain, or dairy – and it’s very low in carbs. Yay! When you use my Dairy-free Cheddar Cheese with any of my bread recipes, such as Rosemary Bread, this sandwich is a snap. Oh Yum!

Tip: Do not overmelt the cheese. Coconut melts at a lower temperature than dairy cheese, and may separate at high temperatures. Wow, was this delicious! It was so nutrient-dense I could eat only half the sandwich. Check it out. I really enjoyed my comfort food fix. Oh yes! I hope you do too!

Pour your liquid cheddar cheese into two containers so it freezes into a flat slab about 1/2 inch thick. To make the sandwich, cut a slab of frozen cheese to fit on your bread. Place it between 2 slices of bread. Toast the bread until it is golden brown on both sides, and the cheese is barely melting.
