This is a luscious and super-easy sauce for pancakes or waffles. Simple blended berries taste fantastic on Low-Carb Blueberry Pancakes. Even better, they contain natural pectin which makes the sauce beautifully thick. Use any tart berry, such as blueberry, raspberry, gooseberry, elderberry, etc. Make sure you use organic berries, so you’re eating a chemical-free breakfast!
This sauce is very low in carbs and won’t raise you blood sugar if you use one of the natural zero-carb, zero-calorie sweeteners such as PureLo Lo Han, or Just Like Sugar Table Top natural chicory root sweetener. Or use honey. You can blend this sauce while the pancakes are cooking. Yummy! Serves 4.
- 2 cups berries, fresh or frozen (I used 1 cup each blueberries and raspberries)
- 6 - 8 tablespoons Just Like Sugar Table Top natural chicory root sweetener, or 2 - 4 teaspoons PureLo Lo Han Sweetener by Swanson, or 1/4 cup raw honey, or your favorite sweetener.
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla
- Place all items in any blender. Blend until smooth.
- Pour over pancakes and enjoy!
