They look like waffles, and taste like heaven. But oh how appearances can deceive! What’s masquerading as a decadently sweet chocolate waffle, is secretly a high-protein breakfast filled with superfoods. Here’s your chance to add all your favorite nutritious ingredients, and no one will guess they’re truly healthy. Let’s just call them “Dark Chocolate Superfood Waffles”. Oh, and maybe you’d better tell them you’ve gone chocolate-crazy for the day or they’ll be suspicious. BTW, these waffles are real nutrient-dense food, and you won’t be able to eat more than one. They’re so delicious I was tempted to go for a second, but one filled me completely. Fortunately, they freeze beautifully. I recommend them with Easy Blackberry Sauce and Instant Coconut Whipped Cream. Makes 8 orgasmic, chocolate waffles.
Ingredients
- 1/2 cup coconut butter
- 1/3 cup pure cacao powder or 1/2 cup carob powder
- 1/8 teaspoon unprocessed salt
- 1/2 teaspoon baking powder
- 1/2 apple, cored, in large chunks with the peel, or a beet, cut in large chunks (75 grams)
- 1/2 cup almond butter
- 2/3 cup Just Like Sugar Table Top natural chicory root sweetener, or 2 tablespoons PureLo Lo Han Sweetener by Swanson, or 1/2 cup raw honey, or your favorite sweetener.
- 2 tablespoons coconut oil
- 3 eggs
- 2 teaspoons pure vanilla
- 3 tablespoons chopped nuts (almonds, pecans, etc.)
- 2 tablespoons whole hemp nuts (hemp hearts)
- 2 tablespoons pure hemp protein
- 1/2 teaspoon nutritional yeast
- 1/4 teaspoon decaffeinated coffee powder (for mocha flavor)
- 1 teaspoon Chlorella Powder
- 1 tablespoon dry hiziki seaweed
- 1 tablespoon maca powder
- 1 dropper-full ChlorOxygen
- 1/4 teaspoon bee pollen
- 1/2 cup liquid or more, as needed (alternative milk, coconut water, or filtered water)
Instructions
- Set the table and prepare your choice of toppings. Heat a waffle iron according to the manufacturer’s directions.
- In a food processor, add the dry ingredients: coconut butter, cacao or carob powder, salt and baking powder. Process until it is a fine powder with no lumps, and dump into a mixing bowl.
- Add to the empty food processor: shredded apple or beet, almond butter, sweetener, coconut oil, eggs, and vanilla. Process very well until the apple (or beet) is completely liquefied.
- Add your favorite superfoods – they’re all optional. Process well.
- Add the dry ingredients to the mixture in the food processor. Process well. The batter will be very thick. Add liquid slowly to thin the batter so it's like a pancake batter that you can just barely pour. If you have to spoon it in, the batter is too thick, and the waffles will be a bit dense.
- Check that your waffle iron is hot. Brush it with a dash of coconut oil. Pour a small amount of batter into the center of each waffle iron square. It should barely fill its square, allowing space for the waffle to expand. Close the waffle iron and bake per the manufacturer’s instructions. When you can gently pull the waffles out with a fork or fingers, and they come away from the iron, they’re done. These are delicate, because they're flourless. Place the waffles on a serving plate. Enjoy them hot with your favorite sauce.
