It’s a tough job, writing a book, inventing 165 original recipes with pure and simple foods. But hey! Someone has to do it. The truth is, I never had so much fun. Today I made Breakfast Parfaits! It was an unforgettable day, and felt like I was on a roll. The recipes are available in my book Good Morning Paleo. I can’t post them here, but I CAN show you how deliciously fun they are to make and eat. A Parfait is a layered treat with cream and decadently sweet things, rarely healthy. In French. However these recipes are original, highly nutritious, super-quick to make. and YUMMY! All my parfaits are Paleo, gluten-free, vegan, low carb, low sugar, low fructose, diabetic, raw, super-tasty, and above all, EASY! Here’s the photo list top left to right:

With instant chocolate mousse, coconut cream, banana, and toasted nuts
#2 Pumpkin Pie Parfait
Pumpkin Mousse with Coconut Cream Pudding, toasted walnuts, and pure chocolate.
#3 Raspberry Cheesecake Parfait
Coconut Cheesecake Pudding (super yummy!) with raspberries and toasted pecans.
#4 Strawberry Mousse Parfait
Strawberry Coconut Mousse, with fresh or frozen strawberries.
#5 Creamy Hemp Mousse with Berries
This is an amazingly creamy and nutritious mousse, with blueberries, kiwis, and chopped almonds
#6 Chia Tapioca Parfait
White chia seeds make a delicious “tapioca” pudding! With assorted low-sugar fruits and nuts.
#7 Lemon Berry Parfait
Lemon Coconut Mousse with strawberries, blueberries, raspberries, gooseberries, or any berries you can hunt and gather!
Naturally, I had to critique each and every one!
