Rainbow Salad with Herb Dressing

My body is asking for veggies today – and this crunchy mixture is my absolute favorite! Quick, colorful, and unbelievably delicious with this blended Yogurt Herb Dressing. If your digestion is delicate, you can steam the raw veggies lightly in a steamer for 2-3 minutes, so they’re partly cooked and still crunchy. Then drizzle them with this very special dressing and enjoy! Use any leftover dressing with everything!. Serves 4.

Rainbow Salad with Herb Dressing



  • 3 cups colorful sliced veggies. My favorites are broccoli, green beans, carrots, red bell pepper, red onion, green onions, cucumber, cauliflower (I used yellow cauliflower). I try to choose veggies with lots of colors - green, red, orange, and purple.


  1. Blend the Yogurt Herb Dressing.
  2. Slice the veggies into small bite size pieces, and place in a salad bowl.
  3. Pour the dressing on top and toss, or serve on the side.
