Jane’s Recipes

DSC_2602 - Version 2

My recipes are all original. Every one! Food should bring you energy, clarity and JOY! Perhaps my biggest discovery is how to make sweets that don’t elevate blood sugar or cause weight gain. We believe desserts are BAD for us (and most of them are)! However sweets can be HEALTHY! In an epidemic of sugar-related diseases like diabetes, heart disease and cancer, THIS is the solution: Use low-carb, original, unprocessed ingredients. There’s no need for deprivation. Here are some of my recipes. Try them and send me your comments!  Jane

“Peanut Butter” Cookies without Gluten, Grain, or Peanuts

I call these babies "No-Peanut Butter Cookies". They taste just like classic peanut butter cookies, crunchy on the outside, soft in the inside. They're Paleo, free of peanuts, gluten, grains, dairy, GMO's and sugars. Even better, they're incredibly easy to make, high in protein and ridiculously low in carbs. Hooray! Use ANY nut butter you like. I used toasted cashew, pumpkin, and almond butters, plus raw hemp butter. See my nut nutritional analysis.

Beware! Non-GMO Foods with Glyphosate

So you're eating GMO-free - that's great. But if non-GMO is your main guiding principal, there's a wake-up call that's flying under everyone's radar. Surprise! A whole new generation of GMO-free fake foods just arrived in your favorite grocery. You can avoid them in 3 steps:

  1. GMO foods are to be avoided. We're getting this. Learn them - see the graphic below. They contain both GMO's and Glyphosate.
  2. Glyphosate foods are everyday foods, both GMO and non-GMO that are raised with toxic chemicals. Remember that Glyphosate or worse pesticides and herbicides are in all non-organic foods.
  3. Certified Non-GMO foods with Glyphosate - Yep, a whole new generation of non-GMO foods with Glyphosate is getting certified. The public is demanding non-GMO, so these toxic foods are getting approved. I see them filling grocery shelves and flying under the radar. Marketed as healthy, they contain plenty of herbicides and pesticides. Don't buy them. Let food manufacturers know we want CLEAN ORGANIC FOOD.

Paleo Strawberry Rhubarb Upside Down Cake

This humble cake doesn’t look particularly fancy. But what it lacks in appearance it makes up for in flavor and simplicity. Probiotic Chocolate Banana Smoothie

Here's a quick snack to satisfy a sweet craving while providing high protein whole food nutrition. Even better, probiotics will keep your inner micro-biome running in top condition. Basically a chocolate banana coconut milkshake, I added my favorite probiotics. We get extra kudos for chocolate, because chocolate is actually a fermented food! Ha ha! However it needs to be 100% and sugar-free to reap the benefits, because sugar disturbs the gut microbiome.

Curried Vegetable Dal, Nightshade-free!

Eat beans and live a long life! I especially love curried red lentils and confess that this dish is my comfort food. Yes, I know they're not officially Paleo. However it turns out that beans have been discovered at Paleolithic fossil sites all over the world, and in some areas were found to be their primary plant food. What about the anti-nutrients? Aha! Two things destroy those pesky lectins and make beans highly digestible. 1) Soaking well 8-12 hours removes

Hmmm... There on the counter was an avocado, a bag of shredded coconut and some blueberries. Blueberries are high anti-oxidant, give it a deep dark color, and rich in pectin to help bind the cake together. It tastes yummilicious with my easy Chocolate Buttercream Frosting.

Zoodles alla Carbonara, Paleo style

Everyone loves Spaghetti alla Carbonara! This easy 15-minute meal is high in protein, low in carbs, Paleo-adapted with zoodles, or zucchini noodles! We think of this as a traditional Italian dish, however it's actually a 1944 adaptation of US Army rations. Spaghetti alla Carbonara was invented by a smart Italian refugee woman during WWII. It seems American troops shared powdered eggs and bacon with starving coal diggers who had fled to the hills around Rome to escape the Germans.

Paleo Poppyseed Cake Hot Fudge Sundae

I have a huge weakness for Poppy Seed Cake. A fabulicious special occasion cake, this is a traditional Jewish Passover recipe from my friend Merle’s grandmother. It is Paleo-adapted to be completely free of grains, dairy, and sugar, but you'd never guess. Instead of wheat flour, it uses shredded coconut, ground in a food processor.  This delectable cake will not cause a blood sugar spike or weight gain if you use the suggested zero carb sweetener. Hooray!

Tuscany Cauliflower Risotto, Funghi e Lenticchie

This delicious risotto is a snap to make, and will rival anything you'll taste in the best Italian trattoria. I made this low-carb cauliflower risotto for my recent cooking workshop in Italy, and it was a huge hit. A classic combination in Tuscan cuisine is to pair lentils with mushrooms, which give a heavenly flavor and rich broth. Riced cauliflower has an al-dente texture just like Arborio rice, but without the carbs. Yay!

Omega-3 Italian Fish Stew with Garlic and Saffron

This recipe is inspired by an amazing day on the Adriatic coast. After teaching a Qigong workshop in Italy, I spent a few magical days in the charming beach town of Sirolo. Of course there's nothing to do but relax and eat fish! The sky and sea were calm and brilliant blue. We lounged under umbrellas all day, while the aroma of roasted garlic, olives, and the freshest fish beckoned us from the restaurant.
